Skewered Singapore Chicken And Pineapple
Serves: 4
Serving size: 2 skewers
Ingredients -
2 Tbs brown sugar
3 Tbs low sodium soy sauce
2 Tbs pineapple juice
4 tsp lime juice
2 tsp vegetable oil or olive oil
1 1/2 tsp curry powder
1/4 tsp salt
3 garlic cloves, minced
1 lb boneless, skinless chicken breast cut into bite-sized pieces
1 C red bell pepper cube; 1 inch
1 1/2 C fresh pineapple cubed; 1 inch
Directions -
1. Combine first 9 ingredients in a large bowl.
2. Add chicken and bell pepper, tossing to coat.
3. Thread chicken, pineapple, and bell pepper onto 8 skewers. Discard marinade.
4. Place kebabs on grill rack or broiler pan coated with cooking spray; cook 10 minutes or until chicken is done, turning occasionally.
